Even if you&#8217;re not a fan of the humble parsnip, the lemon and sour cream give it a beautiful flavour that will leave you wishing you&#8217;d made double the amount!<\/em><\/p>\n<p><em>Serves 4-6.<\/em><\/p>\n<p><em><\/em><a href=\"http:\/\/ravenoustales.files.wordpress.com\/2011\/07\/img_0345.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-510\" title=\"IMG_0345\" src=\"http:\/\/ravenoustales.files.wordpress.com\/2011\/07\/img_0345.jpg\" alt=\"\" width=\"325\" height=\"325\" \/><\/a><\/p>\n<p>2 tblspn olive oil<\/p>\n<p>1 onion, sliced<\/p>\n<p>1 leek, sliced<\/p>\n<p>2 sticks celery<\/p>\n<p>1 clove garlic, crushed<\/p>\n<p>4 small parsnips (2 large), chopped<\/p>\n<p>1 cm slice ginger, roughly chopped<\/p>\n<p>1.25 litres chicken or vege stock<\/p>\n<p>1\/2 lemon<\/p>\n<p>2 bay leaves<\/p>\n<p>Sour cream<\/p>\n<p>Salt and pepper to taste<\/p>\n<p>In large saucepan heat oil and cook onion, leek, celery, garlic, parsnip and ginger for 5 mins. Pour in stock and add lemon half and bay leaves. Cook for 20-25 mins until vegetables are soft. Remove lemon half and bay leaves and puree until smooth.
