If you&#8217;re feeling virtuous serve with green salad.<br \/>\n<\/em><\/p>\n<p><a href=\"http:\/\/ravenoustales.files.wordpress.com\/2011\/12\/cheese.png\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone  wp-image-726\" title=\"cheese\" src=\"http:\/\/ravenoustales.files.wordpress.com\/2011\/12\/cheese.png\" alt=\"\" width=\"235\" height=\"227\" \/><\/a><\/p>\n<p>30g butter, softened<\/p>\n<p>20g mascarpone cheese<\/p>\n<p>2 cloves garlic, crushed<\/p>\n<p>4 thick slices sourdough bread<\/p>\n<p>2 teaspoons dijon mustard<\/p>\n<p>40g gruyere cheese, thinly sliced<\/p>\n<p>40g mozzarella cheese, grated<\/p>\n<p>olive oil<\/p>\n<p>salt and pepper<\/p>\n<p>Mix together butter with crushed garlic and set aside. Combine mascarpone and mustard and spread on all slices of bread. Top 2 slices with cheese and season with salt and pepper as desired. Sandwich slices together and press down firmly.<\/p>\n<p>Heat the garlic butter over a low heat in a large, heavy frying pan with a dash of olive oil to stop the butter burning. Place the sandwiches in the pan and cook for approx 2 mins on each side, until golden brown.
